Eating, Clean and Simple.

Ok, so the vegetarian chili was super yum! Here’s the recipe and some pictures 🙂

Ingredients:

1 cup red onion, chopped

1 cup red/yellow/orange peppers, chopped

1/2 cup of celery (I like to use the center and the leaves because they have a ton of flavor) chopped

1/2 cup carrots, chopped

4 cloves of garlic minced

3 1/2 cups of chopped tomatoes (I used Campari tomatoes but you can use any kind as long as they’re not canned)

1/2 cup of radishes chopped

1 can of pinto beans, rinsed well

1 can of red kidney beans, rinsed well

3 cups of water (you can use a vegetable stock if you want to but I used water to keep the sodium content down as I’m using canned beans)

1 cup of sliced baby Bela mushrooms

Seasonings:

2 tsp of smoked sea salt (or regular sea salt if you don’t have smoked)
